Coyote's Run Estate Winery
Pursuing a dream he had since his University days, wine lover Jeff Aubry and wife Patti founded Coyote’s Run Estate Winery in 2003. Located in the heart of the pastoral paradise of St. David’s they soon established Coyote’s Run as a relaxed oasis for wine lovers to enjoy their hand-crafted product. From the tasting boutique and patio, guests can enjoy a stunning view of their vineyards stretching as far as the eye can see.
As an estate winery, Coyote's Run focuses on the production of small-batch, handcrafted wines with an emphasis on complexity, full flavour, quality and balance. The winery benefits from two vineyards with sharply defined and distinct soil types. This geological quirk created the winery’s Red Paw and Black Paw vineyards. The soil of the Coyote's Run Red Paw vineyard is stony and iron-rich. The Black Paw vineyard contains darker soil, which retains warmth and moisture. From the outset, the winemakers sought to experiment with the two patches of land to see what influence the contrasting soils might have on the grapes.
The wines of the Red Paw vineyard, they discovered, display bright fruit character and possess perfumed and floral bouquets, while the Black Paw wines tend to express more richness in body, and earthy, smoky undertones. Wines from the Red Paw tend to be delicate and refreshing, while the Black Paw wines are apt to be more rich and robust on the palate. Vintage after vintage the effects of the terroir are apparent, creating opportunities to produce wholly differing wines of the same varietal, from a single venue.
Visitors of Coyote's Run have a unique opportunity to sample and compare similar wines from both vineyards and discover just how important the soil can be to the wine that reaches your table. Speaking of tasting, it is a must at Coyote’s Run. Guests have the opportunity to walk the vineyards, feel the distinct soils and learn about the winemaking process. In addition Coyote’s Run offers tastings of their wines paired with cheeses or dark chocolate.
Coyote's Run Estate Winery places an emphasis on a close relationship with the earth. The result is a winery with a distinctly calm and ‘outdoorsy’ atmosphere. Emphasizing this is the winery’s latest addition, the Vineyard Pavilion. Nestled within the Red Paw Vineyard, this is the perfect place to bring your group, enjoy a quick picnic or just sit and enjoy the peace and tranquility of this special winery.
