The Ice House Winery holds a unique position in the Wineries of Niagara-on-the-Lake.  It is the only winery that makes Icewine exclusively.  That’s right.  A winery that is totally dedicated to the making and perfecting of what is often referred to as, “Canada’s liquid gold,” and the world’s rarest wine.

The vision for The Ice House Winery is that of Winemaker and CEO Jamie Macfarlane.  MacFarlane began his career in the Côte d’Or, France wine region, just as the Canadian wine industry was being born.  Upon his return, MacFarlane was a member of the original team who crafted the first Canadian Icewine.  After spending over 25 years as a winemaker at some of the nation’s largest wineries, MacFarlane struck out on his own, establishing The Ice House Winery in 2005.  In 2009, the winery itself opened for guests to enjoy.

The purpose of The Ice House Winery is simply this: to create the highest quality Icewine in the world.  MacFarlane has decided that the only way to achieve this lofty goal is to open a winery 100% dedicated to the making and mastering of Icewine.  MacFarlane likens Icewine to classical music.  It is complex, harmonious and balanced, with an almost indescribable “Wow” factor.   It is this combination that MacFarlane sets out to achieve with each of the Icewines he creates.

Indeed the world has recognized The Ice House Winery’s deep understanding of Icewine.  Aside from winning many international awards since its establishment, perhaps the most unique recognition has come from Hollywood.  In 2010, The Ice House Winery’s Icewine was selected as Canada’s Premium Gift for the celebration at the Golden Globes Oh Canada event.  

You however, do not need to be a celebrity to enjoy the Icewines made by The Ice House Winery.  Located in the coveted Niagara River sub-appellation, The Ice House Winery is housed in a heritage building turned winemaking facility, winemaking lab and winery boutique.  Open daily, guests may simultaneously sample Icewine and observe it being made.

Guests may also wish to take a photo with The Ice House Winery's newest edition Polaris...rumour has it that giving him a bear hug will bring good luck. Polaris is the life-sized sculpture of the mighty Canadian polar bear, a symbol of The Ice House's proud Canadian heritage and the name of the winery's new Icewine spirit in the making.   A visit to The Ice House Winery is also never complete without a Northern Ice N'Icewine Slushie, which is exactly what it sounds like, a refreshing, yet sweet and delicious chilled treat.  Not unlike The Ice House Winery itself, the N'Icewine Slushie is a unique Icewine experience that is a must-do on any wine country tour list.
